Miniature Vegetarian Corn Dogs




Mini Vegetarian Corn Dogs :)
So I saw this recipe on another blog and I thought I must try this.
The only problem was, I am a Pescatarian. That means that I do not eat any meat, with the exception of fish. It's hard watching your friends pig out on fun food, while I'm eating grilled halibut and a side salad :(
I eat veggie burgers and veggie dogs all the time. Its not the same, but Morningstar gets pretty close.
Morning star has corn dogs, but I've tried them, and they just don't cut it close enough! When I saw this recipe I knew I had to give it a try. It DID NOT disappoint! They were so delicious. These are prefect for any party, wether your going to watch a game, having a girls night, or just trying to put a smile on the kids faces, and in their tummies.

So without further ado, What you will need:

1 box of Jiffy Corn Muffin Mix

1 egg, slightly beaten

1/3 cup skim milk

1 TBS honey

4+ Veggie dogs cut into 5 pieces
 ( I used Morningstar Veggie Dogs)

Miniature muffin pan

Preheat your oven to 400 degrees F.

Mix the corn muffin mix, egg, milk, and honey in a large bowl

Spray the mini muffin pan and put 1/2 of a Tbs of batter in each muffin well. place a piece of the 
of the dog in each well. cover with about a Tsp of batter

Bake for 15 to 18 minutes, and let cool.

Serve with any sauce, My favorite is mustard

Hello Dollies :)




Happy Holidays!

So this is a recipe that my family has used every Christmas since I was born, which was long ago. Every year My Dad and I set aside a day to make tons of Christmas cookies. We give them to the neighbors, family, and I always used them to get on my teachers good sides before grades went in ;)

This recipe is a cookie bar, so you can make a huge batch in one single pan. Honestly, if you like almond joy, you will love this. It is the closest thing to Heaven on earth.
Anyways It's late so Im just going to get right to the recipe.

What you'll need:

 2 cups of gram crackers ( 16 whole crackers)

1 stick of  melted salted butter (cut into chunks to melt evenly)

1 1/2 cups of chocolate chips (any kind depending on how sweet you want it)

1 cup of shredded coconut

1 cup of pecans (optional)

1 14 oz can of sweetened condensed milk

                                                           Preheat oven to 350 degrees.
               Melt butter in microwave in heatproof bowl until just melted when stirred. Add graham              
                    cracker crumbs. Mix and then press evenly into the bottom of 8×8 baking pan.
                   Layer coconut, pecans, and chocolate chips on top of graham cracker base.                    
                                      Pour sweetened condensed milk over whole mixture. 
                                Bake in oven for 25 to 30 minutes, or until the top is light brown.

Hey y'all!
so I'm from south florida where its summer year around. Unfortunately, Mrs. Mother Nature forgot that this year. Its been cold and rainy the past couple of days, and I have been missing my sunshine. I mean, when your born and raised here, cold weather is about as welcoming as white after Labor Day. So I was sitting gin my kitchen thinking about something to make me feel happy and at home. I always have different types of fruits and juices at my house and i was wracking my shelves when i saw the pineapple and mandarins. how much more sunny can you get than those two? I really hope you guys enjoy this recipe as much as I do!


Ingredients:
1/2 cup of crushed pineapple
1 cup of mandarins
1/2 cup of sparkling or regular coconut water
1/4 a cup of cranberry juice
crushed ice 



Step 1: pour pineapple and mandarins in blender. Blend until they are smooth. you want some chunks but not too much
  Step 2: add coconut water, ice, and cranberry juice. Blend to your liking.

P.S. If you would like to change the mocktail to a cocktail, you can use coconut rum, or vodka works well also.
